5 Ingredient Creamy Tomato Soup








Remember the insides and tops of those beefsteak tomatoes I told you to hold on to in my last blog post? We'll be using those in today's recipe- a 5 ingredient, delicious, creamy, and incredibly easy soup recipe, that is.

When I make tomato soups, I typically use a bunch of ingredients in addition to the base of a tomato soup. That includes a bunch of chopped tomatoes, tomato paste, chicken cubes, and the whole nine yards. But when I made the stuffed tomatoes yesterday, I knew I wanted to have something on the side, and I wanted something quick and easy. And what better way to utilize the insides of the tomatoes than in a soup?


5 Ingredient Creamy Tomato Soup

All this soup needs is 5 ingredients: onion, garlic, the tomatoes, chicken stock, and heavy cream. Stuff you already have in your fridge and pantry? Probably. 

Of course, don't forget your olive oil and seasonings! Those don't count in the number of ingredients, though. I used my typical, go-to seasonings and the soup was perfect: salt, pepper, onion powder, and garlic powder. And voila, a creamy, hearty tomato soup came to life in a little under 15 minutes.

5 INGREDIENT CREAMY TOMATO SOUP
Yields: 3-5 servings

INGREDIENTS:
- the insides and tops of 6 beefsteak tomatoes
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 cups of chicken stock
- 1 cup of heavy cream
- olive oil
- salt
- pepper
- onion powder
- garlic powder

TO MAKE:
1. In a pot, drizzle some olive oil. Add in the onion and cook until lightly caramelized. Add in the garlic and cook until fragrant.
2. Add in the tomatoes. Make sure the stems of the tomatoes are off and discarded. Toss the tomatoes around in the pot with the onions, garlic, and olive oil, and cook for 3 minutes.
3. Add in the chicken stock. Using an immersion blender, blend the tomatoes together with the onions until smooth. If using a standard blender, remove the pot from the heat, have it cool down for a few minutes, and carefully and slowly add the soup mixture to a blender and blend until smooth. Return to pot over heat.
4. Once everything is completely blended, add in the heavy cream and seasonings. Mix everything together, bring the soup to a simmer, and serve hot. Enjoy!
