Buffalo Shrimp Salad
What to cook when you're short on time right before iftar, but still want something healthy, filling, and delicious?
You make a salad filled with a bunch of different ingredients and a creamy dressing that pairs perfect with every bite.

I had planned for yesterday's iftar to be more... dinner-y, but sometimes the hunger, thirst, and tiredness that comes with fasting all day really get the best of you. So I abandoned my initial dinner plan, remembered that I had some shrimp in my freezer that I could thaw and cook quickly, and decided on making a salad piled with all of my favorite fix-ins.
Every bite had everything I love in a salad, and just knowing that I was breaking my fast on something this good AND healthy was the cherry on top.
Buffalo Shrimp Salad |
Yields: 1-2 servings
INGREDIENTS:
- 12 ounces of shrimp
- olive oil
- 1 tablespoon of butter
- 3 cloves of garlic, minced
- lettuce leaves
- a handful of cherry tomatoes, quartered
- half a cucumber, thinly sliced
- 1/4 of a red onion, thinly sliced
- 2 tablespoons of feta cheese
- sliced avocado pieces
- 1 tablespoon of blue cheese dressing
- half a tablespoon of buffalo sauce, plus more for coating shrimp
TO MAKE:
1. Remove tails from shrimp and place in a bowl. Add some olive oil, salt, pepper, garlic powder, and onion powder. Toss to coat.
2. Heat a medium saucepan on medium-high heat and add some olive oil and butter. Add shrimp to saucepan and cook for a few minutes just until the shrimp turns pink.
3. Drain any excess liquid from saucepan. Add the garlic cloves to the shrimp and cook together. Add a few dashes of buffalo sauce (to your liking) to the shrimp.
4. Toss the shrimp and garlic around with the buffalo sauce only for 2 or 3 more minutes.
5. Arrange your salad. I used a white platter and layered the lettuce, cucumber, cherry tomatoes, and onion slices. Then I added the buffalo shrimp, crumbled feta cheese, and added a few avocado slices on top.
6. Mix the blue cheese and buffalo sauce together in a small bowl and drizzle on top of salad. Enjoy!
