I posted a photo of these delicious cookies on my Instagram the day before Ramadan and am now finally dropping the recipe! I made these cookies during my time on the keto diet and they really hit the spot when it came to my sweet tooth. This is definitely a perfect recipe to make if you have a bag of coconut flour hanging around in your kitchen! It's easy, yummy, and keto-friendly!
COCONUT FLOUR CINNAMON COOKIES
Yields: 15-20 cookies
INGREDIENTS:
- 1 stick of butter, room temperature
- 3 tablespoons of cream cheese, room temperature
- 1 egg
- 1/2 cup of monk fruit sweetener (or sugar, if not on keto)
- 1 teaspoon of vanilla extract
- 1/2 cup of coconut flour
- 1 teaspoon of cinnamon
- 1/2 teaspoon of baking powder
- pinch of salt
TO MAKE:
1. In a bowl, cream together the cream cheese, butter, and sugar.
2. When all is mixed well, add in the vanilla extract and egg. Mix well.
3. In a separate bowl, mix together the coconut flour, cinnamon, baking powder, and salt. Slowly add the dry ingredients into the wet ingredients and mix to combine.
4. Shape and mold the cookie dough into a log form using parchment paper. Place in the fridge to firm up a bit for one hour.
5. Preheat your oven to 350 degrees F. Remove the dough from the fridge and slice the cookie dough into cookies. Place on a parchment-lined baking tray and bake until the cookies are browned around the edges, about 15-20 minutes.
6. Sprinkle with a dusting of powdered sugar if desired. Serve when cooled. Enjoy!
