Have a bunch of onions sitting around in your pantry and have no idea what to do with them?
Make French onion soup! I had SO many onions in my pantry (why? Good question!) and you can only use so many onions in any given recipe. So I had to make onions the star ingredient in one dish to use up my onions... and French onion soup it was!
Easy to make, little ingredients, and devoured in minutes! If you make my recipe, I'd love to see!
FRENCH ONION SOUP
Yields: 4 servings
INGREDIENTS:
- 4.5 cups of sliced onions
- 2 tablespoons of butter
- olive oil
- 2 cartons of beef broth
- 1.5 tablespoons of brown sugar
- 2.5 tablespoons of apple cider vinegar
- salt
- pepper
- garlic powder
- onion powder
- dried parsley
- 1.5 cups of shredded mozzarella cheese
- sliced cheese (any kind works!)
- toasted french bread for serving
TO MAKE:
1. In a big pot, melt down the butter with some olive oil. Add in the sliced onions, and stir and sauté them until they're caramelized and golden brown (for about 20 minutes).
2. Add in some salt, pepper, garlic powder, and onion powder. Give everything a stir. Add the brown sugar and apple cider vinegar and give everything another stir. Add in the beef broth and give everything a final stir.
3. Let the soup simmer on medium-low heat for about half an hour.
4. Add in the shredded cheese, slowly and only a handful at a time, and mix everything together.
5. Ladle the soup into oven-safe ramekins or soup bowls. Top each bowl with a slice of bread and a slice of cheese.
6. Turn on your oven broiler. Place the ramekins on a cookie sheet and place it under the broiler until the cheese is nice and bubbly and melted onto the bread.
7. Garnish with dried parsley and serve hot. Enjoy!
