PEANUT BUTTER AND JELLY WHITE CHOCOLATE COOKIES
Yields: 15-20 cookies, depending on size
INGREDIENTS:
- 1 cup of chunky peanut butter
- 1 cup of brown sugar
- 1 teaspoon of vanilla extract
- 1 egg
- pinch of salt
- heaping 3/4 cup of white chocolate chips
- your choice of jelly/jam
TO MAKE:
1. In a large bowl, combine the peanut butter, brown sugar, vanilla, egg, and pinch of salt.
2. Give everything a nice mix until everything is fully incorporated.
3. Fold in the white chocolate chips.
4. Using floured or greased hands, roll balls of dough to form cookies (I used a tablespoon cookie scoop).
5. Flatten the tops of your cookies just a bit with the palm of your hand. Line a baking tray with parchment paper.
6. Place the cookies on the cookie tray with enough space between each cookie. Bake the cookies in a pre-heated 350 degree F oven for 10-13 minutes, just until the edges of the cookies are brown and crisped up a bit.
7. Remove from oven and allow the cookies to slightly cool. As they're cooling, use your thumb to make a thumbprint into the center of each cookie.
8. Scoop a little bit of jam into the thumbprint. Top with additional white chocolate chips if desired.
9. Allow to cool completely and enjoy!
