Banana Chocolate Muffins

Keeping it short, sweet, and simple today! I baked these delicious muffins for my husband's nieces and they absolutely loved them! Not to mention that if you have some super ripe bananas sitting around in your kitchen, this is a perfect opportunity to use them up!

Banana Chocolate Muffins

BANANA CHOCOLATE MUFFINS
Yields: 12 muffins

INGREDIENTS:
- 1.5 cups of flour
- 1 teaspoon of cinnamon
- 3/4 teaspoon of baking powder
- 3/4 teaspoon of baking soda
- pinch of salt
- 1/2 cup of sugar
- 6 tablespoons of butter, room temperature
- 1 egg, room temperature
- 1 teaspoon of vanilla extract
- 3 large ripe bananas, mashed
- 3 tablespoons of sour cream
SUGAR-CHOCOLATE STREUSEL:
- 1/4 cup of sugar
- pinch of cinnamon
- heaping 3/4 cup of chopped chocolate or chocolate chips

TO MAKE:
1. In a medium-sized bowl, add the flour, cinnamon, baking soda, baking powder, and salt. Whisk together.
2. In a large bowl, cream the butter and sugar together. Once creamed and fluffy, add the egg and the vanilla extract. Mix together. Add the mashed bananas and sour cream and mix until combined. 
3. Add the dry ingredients into the wet ingredients and mix just until everything comes together.
4. In a separate bowl, make the streusel. Add the sugar, cinnamon, and chocolate together and mix. Set aside.
5. Preheat your oven to 450 degrees F. Line a cupcake pan with cupcake liners, and fill each cup with a heaping tablespoon of muffin batter.
6. Take some streusel and sprinkle some into each cup.
7. Layer another heaping tablespoon of batter on top of the streusel in each cup, then top off with the remaining streusel. So basically, each cupcake should be layered with batter, streusel, batter, and more streusel.
8. Bake the muffins at 450 degrees F for five minutes only, then turn the heat down to 350 degrees F and bake for another 16-17 minutes until the cupcakes are done. This allows for the muffins to rise and get that nice muffin top that we all love!
9. Allow to cool before enjoying!
